Sake ONO RARE First Edition is an ultra-premium limited-edition Junmai Daiginjo produced in Niigata, Japan, and released as the inaugural RARE expression in 2025. It is a unique 50/50 marriage of two Junmai Daiginjo sake streams made from Gohyakumangoku and the rarer Ipponjime rice. The two components were harmonized for eight months, creating a layered profile that moves from crisp melon and lychee into richer marzipan, ripe fruit and toasted pecan. Limited to just 12,000 bottles worldwide, the First Edition was designed as a highly collectible expression of modern luxury sake.

Nose: Delicate white flowers, fresh melon, ripe pear and white peach with subtle rice sweetness.

Palate: Silky and refined, with pear, white peach and fresh melon alongside gentle sweetness, clean mineral notes and soft rice umami.

Finish: Clean and refreshing, with lingering melon and stone fruit followed by a crisp, slightly dry close.

Distillery Information

Sake ONO is a modern premium sake brand created to bridge traditional Japanese brewing with contemporary luxury presentation. RARE was introduced in 2025 as the brand's first expression beyond its flagship Junmai Daiginjo. The First Edition was crafted in collaboration with Koshimeijo, a historic family-owned brewery in Niigata, a region renowned for pristine water and refined sake production. Its distinctive 50/50 blending of Gohyakumangoku and Ipponjime rice was designed to create greater aromatic and textural complexity than a single-rice expression. The 2025 First Edition was limited to 12,000 bottles worldwide, establishing RARE as the brand's highly limited collector-focused series.
