Dan Garrison, ex ejecutivo de marketing de una empresa de tecnología, fundó Garrison Bros. en 2008, después de haber sido despedido por un antiguo empleador. Garrison reunió a algunos inversores y miembros de la familia y comenzó a vender productos por contrato de otras destilerías. Después de unos años, generaron suficientes recursos e interés en el mercado para lanzar oficialmente una destilería en 2008, a unas 60 millas al oeste de Austin, en la pequeña ciudad de Hye, Texas.
