Traditional brick ovens are used to cook the agave, which is then crushed using a tahona stone before open-air fermentation and double distillation. Resting in used American white oak ex-bourbon barrels develops a rounded character while preserving the spirit's natural agave profile. El Ateo is a Mexican tequila brand built on the agave-growing heritage of the Villalobos family, whose involvement in agave cultivation dates to 1953. The family grows Agave tequilana Weber Azul in Guanajuato, bringing agricultural experience and close attention to the plant's maturity and quality. The brand operates its own dedicated distillery in the Arandas area of Jalisco, Mexico, under NOM 1635. Its philosophy emphasizes scientific precision, production transparency, and additive-free tequila, combining established Mexican distilling traditions with a deliberate focus on expressing the natural character of agave.
