Consequently, they have sought to integrate all aspects of their production into their 1,200 acre farm. For the past four years they have grown and harvested rye for use in their whiskey; last spring they began harvesting oak from their own forests to produce barrels; and in October, they opened their distillery in their 100+ year old hay barn, finally realizing their dream of producing a single-estate rye whiskey. On top of it all, they produce a Grade A ‘Robust Amber’ maple syrup from 1500 maple trees that line the hillsides around the farm.
