The winery is best-known for its range of Chardonnay-based wines (in keeping with their home town) but also produces numerous labels under wider regional titles, including Auxey-Duresses, Monthélie rouge and Bourgogne Aligoté. These are produced in the cellars of the Boisson family, who have been leading winemakers in Meursault for over two centuries. The 10-hectare (25-acre) estate is run by brother-and-sister team Pierre and Anne Boisson, although wines bearing the Domaine Boisson-Vadot title were produced by their father, Bernard Boisson-Vadot. The Boissons do not use fertilisers or pesticides – instead ploughing controls the weeds and aerates the soil. All labels use the same winemaking methods that are geared towards expressing terroir and the quality of the old-vine vineyard parcels. The top Chardonnay wines see no more than 30 percent new oak.
