Un hermoso Caol Ila, llenado en barrica el 18 de diciembre de 1996 y envejecido durante 12 años en barrica de jerez de roble europeo número 19313 antes de ser seleccionado por Billy Stitchell para el Fèis Ìle 2009.

Nariz: Una nariz muy interesante, especiada y bastante herbácea para un Caol Ila. Toques de anís, estragón, tal vez incluso cúrcuma, junto con algas, caramelo mantecoso, cítricos, miel de manuka y humo en el aire del mar.

Boca: Tallo de jengibre, caramelo, salinidad y humo dulce. Cuerdas viejas, mantequilla salada, heno recién cortado y pimienta.

Final: ¡Buena longitud con notas de malta, manzana toffee, especias y un poco de mostaza en polvo!

Información de la destilería

Caol Ila fue fundada al norte de Islay en 1846 por el agradable nombre Héctor Henderson. Se encuentra cerca de Port Askaig y se encuentra en un entorno exuberante y floral, con vistas a la cala y a los Paps del sur del Jura. La destilería extrae su agua del lago Nam Ban, cuyas aguas viajan a través de piedra caliza y turba antes de llegar a su beneficiario, Caol Ila.
