Celestial organic tequila was born of this rich history passed down through four generations. Their blue agave plants are grown on a single estate owned and run by these 4th generation agave farmers and distillers. The land has more than 2,000 acres of sustainably maintained agave plants in the low-land region of Amatitan. They only harvest the most mature plants, which often take 8-10 years to reach their peak. These hand selected piñas are traditionally baked in stone ovens, and the agave juice is then pressed from the baked piñas, filtered and fermented 100% naturally with wild yeast, taking 7-10 days longer than yeast inoculated fermentation.
