Eden Mill - 2019 Release Single Malt Scotch Whisky | 700ML

One of the earliest official single malts from Eden Mill, distilled in 2014 and bottled for St Andrew’s Day 2019. Matured in a mix of oloroso, Pedro Ximénez, and bourbon casks, with the addition of crystal and chocolate malt spirit casks, this limited release of 3,000 bottles showed early on that Eden Mill wasn’t interested in playing things safe.

Nose: Green apple, pear, vanilla, honey, lemon zest, malt biscuits, toasted almonds, fresh flowers, light oak, and gentle herbal notes.

Palate: Creamy vanilla, honeycomb, orchard fruits, shortbread, butterscotch, citrus peel, roasted hazelnuts, white pepper, gentle oak spice, and sweet malt with a silky texture.

Finish: Medium to long, clean and refreshing, with lingering vanilla, honey, orchard fruits, citrus zest, toasted oak, soft baking spices, and delicate cereal sweetness.

Distillery Information

Eden Mill began with the mission of returning the lost art of distilling and brewing to St. Andrews. A combined distillery and brewery, making craft gin, single malt whisky and beer situated on the site of an old distillery, Seggie Distillery, that was founded in 1810 and closed after 50 years. In 2012 Paul Miller, who has been a part of the drinks industry for nearly 40 years, opened Eden Brewery at the site; after a rebrand, it became Eden Mill. Embodying the spirit and traditions of St Andrews, Eden Mill released ‘Golf Gin’ in 2015 as a nod to its home city, the renowned home of golf. Botanicals are sourced from the local fields, forests and coasts to represent the best of Scotland, applying both modern techniques and traditional methods. The small site only fills eight barrels of whisky a week, though they submitted plans for a £4 million expansion in 2018.
