The mezcaleros use locally grown and harvested agave Espadin and roast the agave piñas underground. The piñas are crushed using a stone molino, naturally fermented in wooden vats, and then double-distilled in copper pot stills. This mezcal is spicy up front and moves quickly to tropical fruits, ginger, and roasted peppers. Accolades from expert panels include 5 stars from F.
