Wild Turkey 81 Proof fue creado por el maestro destilador asociado Eddie Russell. Para darle un toque picante, Eddie usa el famoso puré de centeno con alto contenido de Wild Turkey. Luego envejece el whisky durante 6 a 8 años, más que cualquier otro whisky en esta "clase de peso", en barricas de roble americano seleccionadas a mano con el famoso "alligator char" número 4 para obtener el máximo sabor de cada barrica.

Boca: Sabores de vainilla y notas grandes, de centeno tostado con un ligero ahumado.

En 1869, los Ripy Brothers comenzaron a destilar en Wild Turkey Hill, cerca de Lawrenceburg, Kentucky. Sus inicios transcurrieron bien y su Bourbon, Ripy Brother Bourbon, fue seleccionado para representar al estado de Kentucky en la Feria Mundial de Chicago en 1893.
