Nose: Molasses on butter-laden cathead biscuits, black cherry liqueur atop dark chocolate cake, warm cigar box and toasted oak.

Palate: Hazelnut and dried cherry biscotti dipped in café mocha, whipped cream sprinkled with nutmeg and cocoa, dried dates drizzled with aged balsamic.

Finish: Deep and long-lingering: chocolate mousse leads into blackberry preserves and a soft echo of oak tannin.

Distillery Information

Still Austin Whiskey Co. is an independent grain-to-glass distillery working exclusively with Texas-grown grain. The region’s intense climate accelerates maturation, producing bold flavors in younger age statements. Their Bottled-in-Bond releases highlight careful seasonal batching and a focus on transparency and control over every step of production. Blue corn has become a signature element of the distillery’s identity, bringing a rounder sweetness and a distinct pastry-like texture. This Winter 2025 edition continues the house style of expressive, grain-forward Texas bourbon with polished structure.
