2020 | Jean-Marc Boillot | Batard Montrachet

Delicious pale lemon colour with a few green reflexes. Power in a chiselled rather than a fat style. There is nonetheless huge opulence on the palate, luxurious white fruit, ripe pears, not going as far as peach, yet still managing a certain elegance. All in place here. Long and ripely scented finish.

• Vinous: The 2020 Bâtard-Montrachet Grand Cru has a crushed stone and green apple scented bouquet, one of the most stricter aromatics from Boillot with satisfying focus. The palate is very well balanced with fine acidity, taut and fresh with a touch of sour lemon towards the finish that lingers temptingly. Very fine.

• Jasper Morris: Pale lemon and lime. The bouquet is immediately present, some fresh herbs as much as flowers, fresh apple too, this is quite austere up front, but with much more weight behind waiting to emerge. This is looking backward at the moment, but I expect it to blossom in the bottle.

Domaine J.M. Boillot (also known as Domaine Jean-Marc Boillot) is a Burgundy wine estate producing pure, aromatic wines from Pinot Noir and Chardonnay. The operation is based in Pommard but it makes a large range of wines from numerous appellations mostly located in the Côte de Beaune. Jean-Marc Boillot worked with his grandfather Henri Boillot between the late 60s and 1984 when he became winemaker for Olivier Leflaive. He created his own domaine in 1989 after inheriting vines from his grandfather, and later from his maternal grandmother, Etienne Sauzet's daughter. His brother Henri runs Domaine Henri Boillot in Volnay. Winemaking differs considerably between the red and white wines. The Pinot Noir fruit is destemmed and undergoes a cold maceration before fermentation. After basket pressing, it is aged in barrels (around 50 percent new oak) for around 16 months without racking. The Chardonnay grapes are pressed in pneumatic presses. The juice is racked off the heavy lees then fermented in oak barrels. The white wines are aged for around 11 months in oak, around 30 percent of which is new. The wines are not racked, although the lees are stirred weekly. Wines are sampled just before bottling to determine whether fining or filtration are required.
