Nose: Rich and aromatic with notes of toasted Irish oak, vanilla, orchard fruits, warm spices, and hints of caramel.

Palate: Full-bodied and complex, offering ripe fruit, sweet vanilla, toasted oak, and caramel balanced by distinctive pot still spice and gentle tannins.

Finish: Long and warming with lingering oak, baking spice, subtle sweetness, and a refined woody character.

Distillery Information

Midleton Distillery is one of Ireland’s most celebrated whiskey-making institutions and is home to some of the country’s most renowned Irish whiskey expressions. The distillery combines generations of traditional craftsmanship with innovative maturation techniques, particularly through its careful selection and management of oak casks. The Dair Ghaelach collection—which takes its name from the Irish for “Irish Oak”—showcases the influence of native Irish oak on mature single pot still whiskey. For the Grinsell’s Wood release, individual Irish oak trees were selected and tracked throughout the process, allowing each tree-numbered bottling, including Tree 9, to express the distinctive character imparted by its particular oak.
