Finish: Winey with cocoa powder, wild berries, cinnamon and soft barrel spice.

Still Austin Whiskey Co. is a grain-to-glass distillery based in Austin, Texas. They use local Texas grains (like 100% Texas rye for this expression) and emphasize high craftsmanship in both spirit and packaging. They often do experimental, limited releases under their “Distillery Reserve Series,” collaborating with artists or writers for label design. Aging conditions in the Texas heat contribute to rapid barrel interaction and flavor development. Their master blender, Nancy “The Nose” Fraley, is well respected for pulling together complex finishes (like port, sherry, etc.) that amplify the base spirit’s character without overwhelming it.
