Thompson Bros 18 Year Old Highland Single Malt is a lightly peated whisky, matured in refill wood to showcase balance and complexity. Bottled at 48.5% ABV, it offers layers of charred hazelnut, heather smoke, and subtle maritime notes, lifted by hints of quince and apple peel. The palate brings sharp citrus, heather honey, and minerality, alongside savoury touches of smoked ham and briny capers. A long, earthy finish with lingering peat and cigar smoke makes this a bold, moreish dram.

Not content with establishing one of the World’s leading whisky bars in Dornoch, brothers Phil and Simon Thompson have upped their ambitions and started making their own whisky and gin on-site at Dornoch Castle Hotel, forming Dornoch’s first whisky distillery. Dornoch Distillery was born out of a successful crowdfunding campaign which saw 200 whisky enthusiasts from all over the world dig deep in support of the philosophy of bringing old styles of distillation back to life.
