El Irishman Founder's Reserve fue la primera mezcla creada por Bernard Walsh. Una combinación de 70% de whisky de pura malta y 30% de whisky de destilación simple, triplemente destilado y envejecido en barricas de bourbon. Jim Murray le otorgó 93 puntos y la calificó como "una mezcla maravillosa".

En lo profundo de la pintoresca campiña de Carlow, en Royal Oak, se encuentra la casa del siglo XVIII de la destilería de whisky Walsh. La empresa operada y de propiedad familiar fue fundada por Bernard y Rosemary Walsh, propietarios anteriores de un chalet de esquí en Francia, en busca del whisky irlandés perfecto para acompañar su famoso café. Finalmente, su búsqueda los llevó a fundar su marca de whisky Irishman en 1999.
