Amatitan’s lava rich soils are considered the ideal growing region for agave.The artisan process starts with the harvested agave, cooked in a stone oven. Steel rollers extract the agave juices. The fermentation process is allowed the time to happen naturally. This is more labor intensive, but the result is a complex, flavorful spirit after distillation.
