Chenin Blanc is the backbone of the estate, but its more recent acquisitions in Touraine and Bullas in Spain have significantly expanded its portfolio of grape varieties. The combined 30ha (74 acres) of Chenin Blanc vines in Montlouis and Vouvray have been farmed organically since 1992 and biodynamically from 1999 onwards. The soil types vary from mixtures of flint and clay, to clay and limestone. The estate's Bullas vineyards are situated 2625-3281ft (800-1000m) above sea level where the vines experience a semi-arid Mediterranean climate. Tempranillo and Monastrell grapes are blended in equal proportions to produce 'P,P,P' while Macabeo grapes are solely for the production of the estate's single Spanish white wine, 'M'.
