It uses the Asa no Hikari rice polished to 70%, retains natural color (amber-gold hue), and is unfiltered (muroka). Crafted with an ancient yeast strain and aged two to three years, it offers depth and complexity beyond typical sakes.

Nose: Aromas of cooked rice, soft umami, dried fruit, and light earthiness.
Palate: Smooth and rounded, with warm rice flavors, mellow umami, gentle sweetness and depth of aged character.
Finish: Long and lingering, with soft drying rice tones, faint tannic and umami echoes.
Distillery Information
Yokota Brewery was founded in 1805 in Gyōda City, Saitama Prefecture, by Shoemon Yokota, who sought pure water and quality rice for sake brewing. The brewery has a long heritage of using traditional methods, including aging in enamel tanks and employing special fermentation techniques. Their use of the “oldest known yeast strain” of sake, along with minimal filtering and aging, shows a dedication to preserving historical sake styles. Yokota emphasizes local ingredients — using water from local wells and rice grown in Saitama — to yield sake that strongly reflects its origin. With Edo no Utage, they aim to recreate the banquet-style sake of old Edo era, offering richness, tradition, and a depth that comes from experience rather than gimmicks.
