Wakatake is the premium label of Omuraya Shuzo, a brewery based in Shizuoka Prefecture with roots dating back to the late Edo period. The region is known for its soft water and clean, precise sake styles, often emphasizing purity and aromatic finesse. “Onikoroshi” is a historic naming tradition in sake, originally used for bold, dry styles meant to “cut through” richness—though modern interpretations like this Ginjo bring a more refined, aromatic approach.
