As the wine opens up, delicate floral undertones emerge, adding a touch of romance to the experience.

              Producer Information

              Situated in the center of Gevrey-Chambertin, winemaking at the 20-hectare domaine is in the hands of Didier Chevillion, son in law of Bernard Dupont. In the last ten years, Didier has taken the esteemed property to new heights of quality and international acclaim. In October 2013 the Domaine was sold by the family to the Faiveley estate. The domaine has considerable land holdings in Gevrey-Chambertin. Their largest production is in Gevrey-Chambertin AOC, where they have nine hectares spread over nine lots. The domaine possesses 2 hectares of 45 year old vines of 1er Cru Cazetiers marl through sandy-limestone. Their one-hectare holding in 1er Cru Lavaux St. Jacques has 30 year old vines planted on clay-limestone ground with the presence of many fossils. Dupont Tisserandot also possesses about one-half hectare each of Mazis Chambertin and Charmes Chambertin, where the vines are 60 and 50 years old respectively. The Charmes has a light layer of linestone-clay topsoil over a sub ssection of pure rock. The Mazis tract, situated in the pick “Les Hauts Mazis” section, has yet thinner soil over solid limestone rock. Yields in both appellations not surprisingly average a low 35 hectolitres, and are kept through plowing and serious pruning between the rows in Winter and Spring at this level. Didier Chevillion aims for deeply targeted Gevreys that reveal the differentiations of their individual terroirs of source and above all the essence of Gevrey Chambertin – namely licorice-tinged, soft black fruits with seeet and spicy notes. The grapes are hand picked and sorted in the vineyard and at the winery. The grapes are completely de-stemmed and are given a cold maceration at 12 degrees centigrade for 5 to 8 days. Fermentation, started with natural yeasts, lasts between 15 and 18 days, after which the wines are transferred to 100% new oak casks, for the Grand Cru and Premier Crus. The wines are aged on their fine lees, so as to retain the maximum of fruit and freshness, for up to 18 months before bottling.
