        Les Dolomies is a small and relatively young Domaine, but already making waves with shiningly vibrant wines, located near the Southern Juraā€™s tiny and rather unknown village of Passelas. Husband and wife team Steve and Celine Gormally created the estate in 2008 and work today about 6 hectares with a cooperative system of rental and ā€œtutelageā€ of small parcels owned by local farmers. The farm is certified organic and has from its inception worked with biodynamic principles, with the vines ranging in age from 50 to a staggering 80 and seeing the typical Jura varieties of Savagnin, Trousseau, Chardonnay and Pinot Noir. Having grown under the tutelage of Jura legend Labet, Celine likes to work in the ā€œouilleā€ style, meaning with topped barrels and with no oxidative style. Hers are wine of patient waiting, passion and romantic spirit.
