The 2018 Quench + Temper Bas Vineyard Chapter III is an estate red blend from the Adelaida District in Paso Robles, California, crafted from high-density, dry-farmed plantings of Graciano, Mourvèdre, Grenache, and Syrah.
Producer Information
Quench + Temper is an artisanal, highly focused boutique winery based in the rugged Adelaida District of Paso Robles, California, founded in 2016 by vigneron Brennan Stover. Borrowing its name from metallurgy—where steel is forged into high strength and toughness by being subjected to the opposing extremes of blazing heat and rapid cooling—the winery reflects the immense environmental stress under which its vines thrive. Stover, who built a renowned reputation over two decades as the master viticulturist for the legendary Turley Wine Cellars, applies his deep expertise to his estate BÁS Vineyard. Planted at 1,400 feet elevation on a punishing 45-degree slope directly across from an active stone quarry, the vineyard features pure siliceous shale and marine sediment. Stover entirely dry-farms the site using an intense, high-density system where every single vine is trained to its own individual wooden stake (échalas style)—a historic method common in France's Northern Rhône but exceptionally rare in California. Producing fewer than 1,000 cases annually, the brand works with native yeasts, unfined and unfiltered bottlings, and is celebrated for creating highly concentrated, savory mountain reds blended from Grenache, Syrah, Mourvèdre, and Graciano.
