Producer Information
Son of Bruno Paillard, Aymeric spent several years living in a van, family in tow, touring France before settling on the Northern Rhone as his chosen destination to farm and make wine. Why you may ask? As Aymeric answered us a few years back when we first met him: "because it is a place where the human hand is the main tool. There is no room for mechanisation or industrial ways here. That may seem crazy and not very rational, but it was and still is for me the one condition that brings meaning and nobility to farming." After converting Delas's Hermitage vineyard to organic farming, Aymeric Paillard managed to aquire a prime 4ha vineyard just to the North of Tournon, to which he has now added another small vineyard nearby, and another in Cornas. He has painstakingly restored and brought the hair-raising steep vineyards and their soils back to life, working by hand and horse.
