Pale onion peel color. Nose of fresh red small fruits, raspberries, and red cherries. Dry palate, with fruity aromas of sour small berries. Medium-high acidity with a feeling of freshness and a fruity aftertaste.

It all started at the beginning of 2000, when the winemaker Apostolos Mountrichas of the Avantis Estate in Evia fell in love with Santorini and the strong personality of Assyrtiko. In 2012 he returned to vinify the top indigenous variety, in the volcanic terroir of Santorini. High quality wines, sealed with the raw beauty of the island, these are the wines of the Anhydrous winery.
