      Detailed Description

The 2024 Camille & Guillaume Boillot Saint-Romain "Sous le Chateau" is a vibrant, high-altitude white Burgundy that captures the breezy, limestone-rich energy of its dramatic cliffside appellation.

      Producer Information

Domaine Camille et Guillaume Boillot is an exceptional, newly established boutique wine estate based in Meursault, Burgundy, founded in 2022 by the husband-and-wife team of Guillaume Boillot and Camille Boillot-Violot. Combining elite Côte de Beaune lineages—Guillaume previously served as the acclaimed winemaker at the iconic Domaine Henri Boillot, while Camille is a fifth-generation vigneronne from Pommard—the couple manages a blend of estate holdings and organic micro-négoce parcels focused heavily on precision and terroir expression. Their viticulture utilizes sustainable, organic farming with biodynamic trials to promote soil vitality, while their low-intervention cellar practices yield highly allocated, finely structured wines. For their Chardonnays, including notable cuvées from Meursault and Puligny-Montrachet, they employ whole-bunch vertical pressing with minimal new oak and no bâtonnage to preserve a mineral, energetic tension. Their Pinot Noirs, featuring premier crus from Volnay and Pommard, undergo vinification intégrale—where alcoholic fermentation, malolactic fermentation, and barrel aging occur entirely within the same rotated oak barrels—ensuring a remarkably gentle extraction, silky textures, and vibrant aromatic precision.
