Nose: Vanilla, toasted oak, honey, sweet malt, baked apple, citrus peel, caramel, cereal notes, dried fruit, and gentle spice.

Palate: Rich malt, vanilla cream, caramel, honey, orchard fruit, orange peel, toasted oak, cinnamon, nutmeg, and warming pepper.

Finish: Long and warming, with vanilla, sweet malt, caramel, toasted wood, dried fruit, baking spice, and lingering oak.

Distillery Information

Bimber Distillery was founded in 2015 in North-West London, with whisky production beginning in 2016. The distillery follows a traditional, hands-on approach, including floor malting, slow fermentation, direct-fired copper stills, and maturation in carefully selected oak casks. Bimber uses barley sourced from a single farm, giving its production a distinctive farm-to-bottle philosophy. Its whisky has developed a strong reputation for expressive single-cask releases, including the Shoulders of Giants series, which pays tribute to influential figures from history, science, culture, and the arts.
