Byejoe Dragon Fire baijiu was first released in 2014 and is a flavored version of their baijiu spirit, flavored with dragon fruit and peppers. It's bottled at a slightly reduced 70 proof, which is customary for flavored white spirits (but very low relative to other baijiu). Byejoe (a name we assume is a play on the English phonetic pronunciation of baijiu) is spirit that they describe as "refined in the west using revolutionary patented technology" using ultradound to reduce impurities. Baijiu, similar to vodka, can be distilled from several different grains or rice... in the case of Byejoe red, it is distilled from a base of 100% red sorghum--a traditional grain for baijiu--and bottled at 80 proof (also highly typical of vodka). The traditional serving of baijiu is warm or at room temperatures, though the website also suggests serving on the rocks. We guess it will add a robust, whiskey-like grain character to vodka cocktails somewhat reminiscent of American white whiskey. The black-and-white sketched female model on the bottle is named Jinjing, who serves as the face of their social medial and other promotions. For the Dragon Fire expression, she is etched in color with a decidedly wicked cast to her eye and smile.
