Detailed Description

A highly rare 6-year-old Chain Pier single cask, distilled on 7 November 2019 and bottled in 2026 as part of Tri Carragh Release No. 10. The whisky was initially matured in a PX hogshead before receiving a seven-month finish in a second-fill red wine octave. Rich dark fruit and PX sweetness meet red berries, savoury depth, chocolate and warming spice. Only 86 bottles were produced from the cask.

Nose: Red berries, baked apple, blackcurrant cordial, vanilla cream, raisins, cocoa and soft oak, with sourdough, proving dough and toasted malt adding savoury complexity.

Palate: Rich and layered, with red fruits, dark berries and PX sweetness developing into Welsh rarebit, Worcestershire sauce and pickled jalapeño. Creamy vanilla, chocolate, sweet spice and oak provide balance.

Finish: Long and evolving, with dark fruits, mature cheese, gentle spice and lingering savoury notes reminiscent of Shropshire Blue and digestive biscuits.

Distillery Information

Chain Pier was an experimental Edinburgh distillery established in 2019, marking the return of whisky distilling to the city after more than a century. The project produced only 39 casks between 2018 and 2019 before operations ceased, making surviving Chain Pier whisky exceptionally rare. Its spirit later became associated with the development of the new Bonnington Distillery project in Edinburgh. This Tri Carragh bottling comes from the historic Chain Pier cask stock and showcases the spirit through an unusually active PX and red-wine cask treatment.
