Detailed Description

Chattanooga Whiskey 91 is made from a four-grain mash bill which in addition to yellow corn uses three malted grains: rye malt, caramel malted barley, and honey malted barley. The mash bill recipe was chosen by master distiller Grant McCracken -- Barrel 91-- from the 100 barrels distilled at the brand's experimental distillery. Chattanooga refers to this whiskey as a Tennessee High Malt, but technically this is a straight bourbon. Matured for a minimum of two years in toasted and charred barrels and is finished in a charred 4000-gallon oak solera barrel.

Chattanooga 91 Straight Bourbon Whiskey Tasting Notes

Nose: The nose opens with a large dose of malted grains that builds a base atop of a mingling of oak, Bing cherries, sweet bread, brown sugar. The scents presented are nicely balanced and are a pleasant way to start the sip.

Palate: Brown sugar and malted grains are immediately noticeable. The lower proof makes this bourbon easy to roll around your mouth, and in doing so, further reveals aged oak, leather, and a touch of vanilla. It’s an overall simple, yet enjoyable palate.

Finish: Leather, oak, a hint of malt, and white pepper start off the finish and transition to dry oak. The finish is short, and while a fine way to end the sip, it doesn’t convey the same level of depth as the nose and palate.

Distillery Information

The Chattanooga Whiskey Company is a producer of bourbon whiskey and "Tennessee High Malt" bourbon whiskey, located in Chattanooga, Tennessee. The company was founded by Tim Piersant and Joe Ledbetter. The 1816 brand was launched in April 2012,[1] and the company simultaneously announced its intention to help change local distilling laws. The launch met with some initial criticism, primarily due to where the product was made (contract manufactured at MGP/LDI of Indiana), but Hamilton County laws prohibited the manufacture of "intoxicating liquors" at the time.[4] Local public awareness eventually became a catalyst in galvanizing support to change Prohibition-era distilling laws. In March 2015, the company opened the first legal distillery in Chattanooga since Prohibition. The first experimental whiskey, "Batch 001: Tennessee High Malt", was released in August 2017.
