Clairin Sajous 2023 Rum | 700ML

Produced at Distillerie Chelo, Clairin Sajous is an intriguing style of Haitian sugar cane juice rum. Sugar cane is pressed and then reduced to juice over fires fuelled by the leftover cane remains. It's then fermented using wild yeasts and double-distilled before being bottled at full strength.

Nose: Wet grass, iced buns, ripe mango and a hint of peppercorn.

Palate: Bitter herbs balanced by milk chocolate, with continued grassy notes.

Finish: Very slightly oaky. Brown sugar and nutmeg.

Distillery Information

Michel Sajous produces his clairin at the Chelo Distillery in Saint-Michel-de-l'Attalaye, Haiti, using methods that reflect centuries of local rum-making tradition. The distillery harvests indigenous Cristalline sugar cane by hand, crushes it using traditional mills, and relies on spontaneous fermentation with native yeasts before distilling in small pot stills. These authentic production techniques preserve the unique agricultural identity of the region and result in a spirit that vividly expresses its place of origin. Introduced to the international market through Velier, Clairin Sajous has become one of the world's most celebrated artisanal rums, admired for its authenticity, purity, and unmistakable Haitian character.
