A distinctive organic Welsh single malt matured in a Marsala Dolce cask, bringing a sweet Italian wine influence to Dà Mhìle’s spirit. The whisky is made using organic Welsh barley and develops a light, crisp and sweet profile, with floral fruit, warm spice, vanilla and toasted oak. The Marsala maturation gives the whisky an especially wine-led character while retaining a clean malt backbone.

Nose: Floral and fruity, with sweet barrel-aged wine, light vanilla, gentle spice and warmed oak.

Palate: Sweet Marsala wine character with toasted oak, liquorice, soft malt and a warming, rounded sweetness.

Finish: Long and warming, with lingering sweetness, toasted oak and a gentle wine-cask character.

Distillery Information

Dà Mhìle Distillery is an organic Welsh spirits producer based at Glynhynod Farm near Llandysul, Ceredigion. Founded by John and Christine Savage, the distillery produces whisky and a range of other organic spirits using ingredients and resources connected to the surrounding farm. Dà Mhìle’s whisky program focuses on organic Welsh barley and distinctive cask maturation, including wine, sherry, Madeira and Marsala casks. The distillery is known for small-batch production and an experimental approach to Welsh whisky.
