Nose: Fresh and elegant with aromas of green apples, ripe pears, lemon zest, honey, vanilla, and delicate meadow flowers, supported by soft cereal notes and gentle oak.

Palate: Smooth and beautifully balanced, offering flavours of orchard fruits, creamy vanilla, honeyed malt, shortbread, and citrus, layered with subtle white pepper, toasted almonds, and light oak spice.

Finish: Long, clean, and refined, with lingering notes of sweet malt, fresh fruit, vanilla, gentle spice, and a delicate floral freshness that fades gracefully.

Distillery Information

Daftmill was founded by brothers Francis and Ian Cuthbert on the family farm in the Howe of Fife, with planning for the distillery beginning in 2003 and the first spirit running on 16 December 2005. Built in converted mill buildings on a working farm, it has remained closely tied to agriculture from the start, using barley grown on the estate and water from its own artesian well.
