Nose: Aromatic quince with fresh pine, juniper and green botanicals, followed by plum, cherry, cubeb pepper, cardamom and a touch of cinnamon.

Palate: Bright and pleasantly tart, with sour quince, lemon, lime, grapefruit and pomelo. Juniper and pine-like botanicals give structure, with candied citrus peel and a subtle peppery character.

Finish: Sweet and sour with lingering quince juice, juniper, herbs and pepper. Citrus, tea-like tannins and a delicate hibiscus note remain on the finish.
