The GlenAllachie 21 Year Old Cask Strength Batch #7 is an exceptionally rich and mature Speyside single malt, created by Master Distiller Billy Walker as the seventh release in the series. After primary maturation in bourbon barrels, the whisky received extended secondary maturation in carefully selected Pedro Ximénez and Oloroso sherry puncheons and hogsheads from Spain. The result is a deeply layered whisky filled with espresso, dark chocolate, forest fruits and spiced plums, supported by rich honey, treacle and dried-fruit sweetness. Bottled at its natural cask strength of 51.9% ABV, Batch #7 combines remarkable sherry richness with the underlying elegance and fruitiness of mature GlenAllachie spirit.

Nose: Baked ginger and rich mocha, followed by honeycomb, spiced orange and candied hazelnuts. Toasted cinnamon and cocoa add further depth to the dark, luxurious sherried character.

Palate: Black cherries and mocha lead into poached red apples, mānuka honey and crystallised ginger. Muscovado sugar, damson plums, raisin buttercream and treacle create a full-bodied and intensely rich palate.

Finish: Long, rich and warming, with lingering mocha, dark fruit, raisin buttercream, treacle and gentle ginger spice. The finish remains deeply sherried and luxuriously sweet, balanced by mature oak and dark cocoa.

Distillery Information

The GlenAllachie Distillery was founded in 1967 near Aberlour in the heart of Speyside. For much of its history, its robust and fruity malt was primarily produced for use in premium blended Scotch whisky before the distillery began developing a stronger identity as a single malt producer. In 2017, the distillery was acquired by a group led by renowned Master Distiller Billy Walker, beginning a major new chapter focused on exceptional cask management and small-batch maturation. GlenAllachie has since become particularly respected for its use of Pedro Ximénez and Oloroso sherry casks, alongside an extensive range of other carefully selected oak types. The 21 Year Old Cask Strength series represents the pinnacle of this approach, with each batch individually composed rather than designed to replicate the previous release.
