Legendre Herbsaint is a classic New Orleans anise-flavored spirit created as an American alternative to absinthe. Made from J. Marion Legendre's original 1930s recipe, it delivers an intensely aromatic combination of anise, mint, fennel and star anise. Its bold herbal character is balanced by refreshing sweetness and a distinctive liquorice quality. Traditionally used as an essential ingredient in the Sazerac, it can also be enjoyed chilled, over ice or in classic New Orleans cocktails.

Nose: Intense anise and star anise with fresh mint, fennel, sweet herbs and subtle citrus.

Palate: Bold and aromatic, with sweet anise, fennel and mint supported by herbal spice and a gentle sweetness.

Finish: Long, refreshing and distinctly sweet, with lingering anise, liquorice, mint and fennel.

Distillery Information

J. Marion Legendre, a New Orleans pharmacist, learned the techniques of absinthe and pastis while serving in France during World War I. After Prohibition ended, he returned to New Orleans and introduced his own absinthe-inspired spirit, originally called Legendre Absinthe. Because of American regulations surrounding the word absinthe, the product was renamed Legendre Herbsaint and launched in the 1930s. The Sazerac Company later acquired the Legendre business and continues to produce Herbsaint using Legendre's original recipe. Today, Herbsaint remains deeply associated with New Orleans cocktail culture and is a defining ingredient in the traditional Sazerac.
