The agave were wood-roasted in a stone horno, milled by horse-drawn tahona, and fermented with wild yeasts. This mezcal was double distilled in a copper still and rested for two years before it was bottled in June of 2017. There was a total of 500 liters (736 bottles) in this batch with an ABV of 48.5%.
