Cementerio Mezcalero (Mezcal Graveyard) is a collection of mezcals aged in glass which honors an old tradition in certain small communities. Some of the community’s best mezcals are aged in glass containers, often underground, to be unearthed at a later time for family celebrations such as birthdays, weddings, and baptisms. A significant portion of the proceeds are set aside for tourism equipment of Tzitzio, Michoacan in order to promote the Desentierros Mezcaleros (mezcal unearthing) traditionally held during Day of the Dead. The first edition, released in 2016, is made with 100% agave Sahuayensis (sp. Americana) in Tzitzio, Michoacán by Mezcalero Don Guadalupe Pérez. Agave Sahuayensis grows in western Michoacán, close to Jiquilpan and Sahuayo. It is a large agave, sometimes measures up to 2 meters in height and can weight between 80 to 200 pounds. The agaves are cooked in a conical lava rock pit for 4 days and fermented in oak vats with natural airborne yeasts. It is double distilled in a copper alembic still with a pine wood hat. Finally, this mezcal was rested in large glass demijohns for 9 months, 3 feet underground.

Nose: There is particularly intense campfire on the nose and hot gravel on the palate.
Palate: Lots of rocky, chalky minerality, spicy herbs, and white and black pepper dominate the palate.
Finish: Sweet, peppery, palate-coating powerhouse of a mezcal.
