The unique flavor of MG Cenizo Mezcal, from Oaxaca, Mexico, is a result of the careful process of combining traditional techniques with the ingenuity of the modern world. The copper stills are heated by firewood, which is also used to dry the mezcal in the sun. This process results in a smoky flavor and a darker color. After the fermentation process, it is left to age in oak barrels for three years.
