Finished in first-fill Pedro Ximénez sherry butts and bottled at 57.1% ABV, it combines Mortlach’s naturally rich, weighty spirit with the deep fruit and sweetness of PX-seasoned oak.

Nose: Raisins, dates and dried figs, followed by dark chocolate and orange peel. Treacle, roasted nuts, polished oak and warming spice develop alongside Mortlach's distinctive rich and savoury character.

Palate: Rich and muscular, with fruitcake, dried figs and molasses leading into cocoa, sweet malt and roasted walnuts. The Pedro Ximénez influence brings deep dark-fruit sweetness, balanced by Mortlach's weighty texture and gentle savoury complexity.

Finish: Long, powerful and warming, with lingering dark fruits, dark chocolate, oak tannins and persistent sherry sweetness. Gentle warming spice and Mortlach's robust character remain long after the sweeter PX notes fade.

Distillery Information

Mortlach Distillery was founded in 1823 in Dufftown, Speyside, becoming the town's first licensed distillery. It is renowned for its unusually complex distillation regime, often described as “2.81 times distilled,” involving six stills of different shapes and sizes and the distinctive small spirit still known as the Wee Witchie. This intricate process produces the rich, weighty and savoury character for which Mortlach has become famous. Much of its production has historically been prized for premium blended Scotch, although the distillery has also developed a devoted following among single malt enthusiasts. Signatory Vintage, founded in 1988, is one of Scotland's best-known independent bottlers and its 100 Proof series presents bold small-batch whiskies at 57.1% ABV without added colour or chill filtration.
