Ninefold | Merchant Parrot Rum | 700ML

An overproof, unaged Pure Single Rum distilled in a traditional pot still at Ninefold Distillery in Dumfries & Galloway. Bottled at a powerful 63.5% ABV, Merchant Parrot is designed to deliver extra body and depth while retaining Ninefold’s expressive fruity and floral character. It takes its name from London’s Black Parrot and Merchant House rum bars, early supporters of the distillery.

Nose: Heather honey, rose petals and ripe banana lead into soft caramel, toffee and subtle chocolate. A fresh, lightly vegetal note adds complexity beneath the sweetness.

Palate: Full-bodied and powerful, with banana, honey and toffee alongside rich chocolate and delicate floral notes. The high proof brings warmth and intensity while retaining a surprisingly rounded texture.

Finish: Long and warming, with lingering banana, honey, caramel and dark chocolate. Floral notes and a gentle peppery heat remain on the finish.

Distillery Information

Ninefold Distillery is an independent Scottish rum producer based at Dormont Estate near Dalton in Dumfries & Galloway. The distillery produces its rum entirely from scratch using sugar-cane molasses, fermentation and copper hybrid pot-and-column distillation. Its signature Pure Single Rum forms the foundation for expressions such as Celestial Spiced. Ninefold also matures rum on site in a range of casks, with production and bottling carried out at the distillery.
