Ninefold’s signature unaged Scottish rum, distilled from sugarcane molasses in Dumfries & Galloway using a handmade copper hybrid pot-and-column still. The spirit is double distilled and bottled without oak maturation, allowing its naturally creamy, fruity and molasses-driven character to shine. Its profile combines banana bread, butterscotch, vanilla and citrus with a characteristic peppery finish.

Nose: Creamy vanilla and butterscotch with banana bread, sweet molasses and bright citrus peel. Soft fruity aromas give way to a subtle peppery spice.

Palate: Smooth and naturally sweet, with banana bread, caramel and rich butterscotch alongside citrus and gentle molasses. A creamy texture carries the fruit and confectionery notes before peppery spice develops.

Finish: Long and warming, with lingering caramel, citrus and soft fruit followed by a distinctive white-pepper spice. Clean, dry and gently warming.

Distillery Information

Ninefold Distillery is an independent Scottish rum producer based at Dormont Estate near Dalton in Dumfries & Galloway. The distillery produces its rum entirely from scratch using sugar-cane molasses, fermentation and copper hybrid pot-and-column distillation. Its signature Pure Single Rum forms the foundation for expressions such as Celestial Spiced. Ninefold also matures rum on site in a range of casks, with production and bottling carried out at the distillery.
