A rich Scottish single rum matured in virgin American oak barrels, allowing the spirit to develop pronounced vanilla, caramel and toasted oak character. The fresh oak brings layers of butterscotch, chocolate, coconut and ripe banana, balanced by Ninefold’s naturally fruity molasses-based rum. Each cask develops its own individual character during maturation.

Nose: Sweet butterscotch and caramel with vanilla, ripe banana, coconut and delicate citrus. Hints of toasted oak and warm spice add depth.

Palate: Rich and rounded with toffee, milk chocolate, vanilla and soft brown sugar. Coconut, banana and fresh oak develop alongside gentle cinnamon and baking-spice notes.

Finish: Smooth and lingering, with vanilla, caramel and toasted oak leading into a gentle peppery spice and lingering tropical fruit.

Distillery Information

Ninefold Distillery is an independent Scottish rum producer based at Dormont Estate near Dalton in Dumfries & Galloway. The distillery produces its rum entirely from scratch using sugar-cane molasses, fermentation and copper hybrid pot-and-column distillation. Its signature Pure Single Rum forms the foundation for expressions such as Celestial Spiced. Ninefold also matures rum on site in a range of casks, with production and bottling carried out at the distillery.
