Peallach is a pseudonym used for Ledaig, the heavily peated single malt produced at Tobermory Distillery on the Isle of Mull. Distilled in 2014, this whisky spent more than nine years in a refill bourbon barrel before an eight-month finish in a first-fill Pedro Ximénez sherry barrique from Ximénez-Spínola. The result combines intense island peat with rich dried-fruit and dessert-like PX sweetness.

Nose: Smouldering wood smoke, brûléed figs, cherry liqueur and sweet peat, lifted by a fresh coastal breeze.

Palate: Dark chocolate, sticky toffee pudding, candied orange and spiced plum, followed by rich sweet peat smoke.

Finish: Long and smouldering with honeyed dates, dark chocolate, lingering peat and warming sherry sweetness.

Tobermory Distillery was established in 1798 on the colourful waterfront of Tobermory on the Isle of Mull, making it one of Scotland's oldest active distilleries. The distillery produces two distinct single malts: the unpeated Tobermory and the heavily peated Ledaig. Its island location and maritime climate contribute to the distinctive coastal character found in its whisky. Glaschu Spirits Co. is an independent Scottish spirits company known for carefully selected whisky releases and distinctive cask maturation.
