Detailed Description

Talking Cedar Amaro is a Pacific Northwest-style American amaro crafted with native botanicals inspired by the lands of the Chehalis Tribe. It opens with a deep, complex bitterness before developing layers of herbal botanicals, soft citrus peel and earthy roots. The profile is balanced by subtle natural sweetness, giving the amaro depth without becoming overly heavy or syrupy. A dry, bittersweet character makes it particularly well suited to sipping neat, over ice or in spirit-forward cocktails such as a Boulevardier.

Talking Cedar Amaro Tasting Notes

Nose: Earthy herbs, citrus peel and native forest botanicals with subtle floral notes and gentle root-like bitterness.

Palate: Deep and bittersweet, with herbal complexity, soft orange and citrus peel, earthy roots and restrained natural sweetness.

Finish: Long, dry and pleasantly bitter, with lingering herbal, earthy and citrus notes and a clean bittersweet snap.

Distillery Information

Talking Cedar is a tribally owned brewery and distillery located on Chehalis tribal land in Washington State. The distillery is part of a historic effort by the Confederated Tribes of the Chehalis Reservation to establish legal alcohol production on tribal lands, following the overturning of laws that had prohibited Native American distillation. Talking Cedar now operates a state-of-the-art distillery producing gin, brandies, whiskeys and specialty botanical spirits. Its spirits program emphasizes ingredients connected to the Pacific Northwest and the land surrounding the Chehalis community. The Amaro represents this philosophy through the use of native botanicals and a contemporary American interpretation of the traditional herbal liqueur style.
