Nose: Earthy rye, dark caramel, and oak char, notes of cherry pie, and a touch of spearmint.

Palate: Candied pecans, toffee, and toasted rye bread join waves of oaken vanilla and burnt brown sugar, bringing balance to cracked black pepper and cinnamon warmth.

Finish: Bready rye spice, mellow notes of buttered corn, and oak char linger.

Wilderness Trail's range is diverse, each with its unique taste profile, but all bearing the hallmark of the distillery's commitment to quality: Bourbon: Their bourbons are known for their sweet mash process, as opposed to the more commonly used sour mash. This method, although more challenging, results in a cleaner and crisper flavour. Using a mix of corn, wheat, or rye, and malted barley, these bourbons are aged in charred new oak barrels, imparting rich caramel and vanilla notes.
